One Pound of Ground Beef, One Pot, 25 Minutes, and the Cheesy Dinner My Kids Now Request Every Week

Some nights, I just want dinner without washing every pan I own. That's why I love this cheesy hamburger and potatoes casserole. One pound of beef, one pot, and about 25 minutes from start to serving, including sautรฉing, pressure cooking, and pressure release.

hamburger and potatoes casserole

It reminds me of Hamburger Helper, only with potatoes instead of pasta and A LOT of cheese. The kids love it, and I love making one pound of beef go further.

Remember Hamburger Helper? This Is Why I Still Love the Idea

Remember browning beef, adding Hamburger Helper, and calling dinner done? Nothing fancy, but it worked!

General Mills tested Hamburger Helper on the West Coast in December 1970 and launched it nationally under Betty Crocker in August 1971. With meat shortages and rising beef prices, its promise was simple: one pound of beef could feed five people.

That still sounds good to me! Potatoes stretch the beef beautifully, especially once the cheese melts through.

Yes, You Can Make This in 25 Minutes (But There's a Catch)

Anyone who's used an Instant Pot knows five minutes on the display doesn't mean dinner takes five minutes!

This Cheesy Instant Pot Ground Beef and Potatoes recipe lists 25 minutes total, including sautรฉing, pressure cooking, and pressure release.

Brown the beef, add evenly chopped potatoes, seasonings, and liquid, then pressure cook. Release the pressure before stirring in the cheese. Trust me, you don't want burnt cheese stuck to the bottom!

I chop everything beforehand, although pressure buildup can vary. Twenty-five minutes is a realistic target, not a guarantee.

One Thing I Never Guess With Ground Beef

I used to think browned beef meant cooked beef. Turns out, looks can be deceiving!

The USDA says ground beef must reach 160ยฐF internally, even when you finish cooking it under pressure.

Check the meat itself with a thermometer, not the potatoes or sauce. Check several spots if it's crumbled, and continue cooking if needed.

That's one shortcut I'm not taking!

My Favorite Trick for Always Having Ground Beef Ready

I divide larger packages into one-pound portions, flatten them in freezer bags, and label everything. Future me is always grateful!

Raw ground beef should be used within 1 to 2 days, or frozen. Keep your fridge at 40ยฐF or below.

Frozen at 0ยฐF, beef stays safe indefinitely, but USDA recommends using it within about four months for quality. FoodSafety.gov suggests three to four months.

Thaw a portion in the fridge beforehand, or your quick dinner won't be so quick!

Don't Forget About Those Potatoes Hiding in the Pantry

I can't be the only one who buys potatoes and forgets half the bag!

Whole potatoes prefer somewhere dark, dry, and ventilated at 45 to 50ยฐF. They can last several weeks to two or three months, compared with one or two weeks on a countertop.

These are general consumer storage estimates, not USDA expiration dates.

I use a ventilated basket and check for rot or excessive greening and sprouting. With potatoes ready and beef frozen, dinner is practically planned!

The Leftovers Might Be My Favorite Part

Cheesy beef and potatoes make a fantastic lunch, but don't leave the pot sitting out all evening.

USDA says refrigerate cooked food within 2 hours, or 1 hour above 90ยฐF. I transfer leftovers into shallow containers.

Leftovers keep 3 to 4 days refrigerated or 3 to 4 months frozen.

Frozen leftovers remain safe indefinitely at 0ยฐF, although flavor and moisture decline.

Reheat to 165ยฐF, checking with a thermometer. I add a splash of milk or broth to loosen the cheese. Works wonders!

Apparently, We're All Craving Hamburger Helper Again

Eagle Foods, Hamburger Helper's current owner, reported a 14.5% year-over-year sales increase in August 2025. With grocery prices climbing, I'm hardly surprised.

An Eagle Foods executive explained:

โ€œJust as in 1971, the brand has become a destination for consumers seeking convenience, bold flavor and affordability amid high inflation, rising beef prices, unemployment concerns and increasing demands on multi-earner households.โ€

Homemade isn't always cheaper than boxed, but using leftover cheese, potatoes, and pantry seasonings helps stretch the budget.

One Pound of Beef, and Dinner Is Taken Care Of

Before dinner, remember these basics:

  • 160ยฐF: Cook ground beef to this temperature.
  • 2 hours: Refrigerate leftovers within this time, or 1 hour above 90ยฐF.
  • 165ยฐF: Reheat leftovers to this temperature.
  • 1โ€“2 days: Use refrigerated raw beef or freeze it.
  • 45โ€“50ยฐF: Store whole potatoes somewhere cool and dark.

One pound of beef, a few potatoes, and enough cheese to make everyone happy. No complicated ingredients or mountains of dishes.

And when the kids request it again next week? At least dinner's already sorted!
