What Is Mojo Pork?

Mojo pork is a traditional Cuban dish that's made by marinating pork shoulder in a citrusy, garlicky sauce known as mojo. The mojo marinade infuses the meat with flavor and helps to tenderize it, resulting in a juicy and delicious final product. The dish is often served with rice and beans, but it can be used in a variety of other ways such as in Cuban sandwiches, tacos and casseroles.

How To Make Mojo Pork In Instant Pot

You will find the full recipe with ingredients and nutritional breakdown in the recipe card below.

There are two stages to making mojo pork in the pressure cooker. The first stage is to pressure cook the pork with mojo marinade. The second stage is to shred and broil the pork in the oven, however this step is optional as the pork is ready to be served once pressure cooked. An additional step is to prepare the sides to go with the mojo pork, which in our case are ingredients for Cuban sandwiches.

Let's break it down with step-by-step photos and video. You can use a 6-quart or 8-quart Instant Pot.

Mojo Marinade

Step 1. In a bowl, whisk together the mojo marinade: orange juice, lime juice, olive oil, garlic, oregano, cumin, salt, and black pepper to create the marinade.

Optional: Coat the pieces of pork in the marinade and marinate for a few hours or overnight, however, you can also pour the marinade directly into the Instant Pot without marinating the meat prior.

Pressure Cook Mojo Pork

Step 2. Add ¼ cup of water or chicken stock to the bottom of the Instant Pot. Place the pork chunks in the Instant Pot and pour the marinade over the top, ensuring that all pieces are coated with the marinade.

Step 3. Close the Instant Pot lid and set the valve to the sealing position. Select the "Manual" or "Pressure Cook" button and set the timer for 60 minutes on high pressure. After the cooking cycle is complete, allow the Instant Pot to release pressure naturally for 10-15 minutes, then manually release the remaining pressure.

Step 4. Remove the pork from the Instant Pot and shred it using two forks.

Mojo Pork FAQs

Can I make mojo pork without an Instant Pot?

Yes, you can make mojo pork in a slow cooker or in the oven. Just adjust the cooking time accordingly. If you're cooking mojo pork in a slow cooker, it usually takes around 6-8 hours on low heat or 3-4 hours on high heat to get the pork tender and fully cooked. However, the cooking time can vary depending on the size of the pork and the heat settings of your slow cooker. The cooking time for mojo pork in the oven will depend on the size and thickness of the meat. Generally, it is recommended to cook pork at 350°F (175°C) for 25-30 minutes per pound, or until the internal temperature reaches 145°F (63°C) for medium-rare to medium doneness.

Which cut of pork is best for mojo pork?

Pork shoulder (also known as pork butt) is the traditional cut for making mojo pork due to its flavor and texture when slow-cooked. It's a tough, fatty cut that benefits from long, slow cooking to break down the meat and make it tender.

Pork tenderloin is a leaner cut and cooks faster. It’s a good option if you want quicker-cooking mojo pork,  but keep in mind that it won't be as juicy or flavorful as pork shoulder.

Pork loin is another leaner cut that is similar to tenderloin but larger. It can be used for mojo pork, but it may require some additional marinating or seasoning to add more flavor and moisture to the meat.

Can I make the marinade ahead of time?

Yes, you can make the marinade up to 2 days ahead of time and store it in the refrigerator until you're ready to use it.

I apologize if I missed it— where does the cilantro get added? After cooking or before?

Hey Helen, it goes in the pork marinade. I see that it was missed in the instructions but all ingredients under Mojo pork will go in during cooking.

What would cooking time be for a tenderloin?

Good question. Tenderloin doesn't need much cooking at all, so without browning it first, set it to HIGH pressure for 5-7 minutes depending on thickness.
Once the cooking is done, release the pressure naturally for 10 minutes (if the pork tenderloin is much thicker than 1.5-2”, then add a few more minutes to natural release).
