What Is Brunswick stew?

If you've never heard of Brunswick stew before, let's cover a few basics to get your familiar with this comforting dish. This stew is a Southern dish made with beans, vegetables and meat cooked in a tomato base. The stew is usually finished with barbecue sauce and has a touch of cayenne pepper or chili to give it a rich flavor and sweetness. It's a great recipe for using up leftover meat (often from a roast) and vegetables, as well as some ingredients in your pantry.

The origin of this stew is unclear, although both Brunswick County, Virginia and the city of Brunswick in Georgia claim to have created it. In any case, it's a popular dish in the Southern states that is worth trying in your own kitchen.

INGREDIENTS IN THE BRUNSWICK STEW

Brunswick stew ingredients

This Instant Pot Brunswick stew is made with cooked pork shoulder or leftover pulled pork, along with shredded or chopped cooked chicken, corn, lima beans (usually frozen are used) and some potatoes. It can also be made with leftover turkey meat after Thanksgiving or Christmas. The stew base is done with chicken stock and chopped tomatoes and flavoured with Worcestershire and barbecue sauces as well as a few seasonings.
The starch in the potatoes thickens the stew as does the added four and water mix at the end of cooking. The are many variations to this stew, some people make it very thick and others a bit soupier. Ours is somewhere in between.

How to make Instant Pot Brunswick stew

You will find the full list of ingredients, instructions and nutritional breakdown in the recipe card below. Here are some basic steps and photos to guide you along.

Step 1. Once you've prepared your ingredients, turn the Instant Pot on and set it to Saute function. Once hot, add the onions and butter and cook for 2 minutes to soften. Add the vegetables, leftover pork and cooked chicken, potatoes (and any other veggies you like).

Step 2. Add the Worcestershire sauce, canned tomatoes, chicken stock and stir through. Press Cancel to stop the Saute process.

Step 3. Secure the lid and press Manual/Pressure Cooke and adjust the timer to 1 minute on HIGH pressure. This is correct because we are using leftover cooked meat, so the only things that need cooking are vegetables and they don't take too long. Plus, once the ON sign comes on, the Instant Pot will take 10-15 minutes to come to pressure before the timer kicks in and during the pressurizing phase, cooking already begins. Once the timer is done, release the pressure naturally for 10 minutes and then use the quick release to let out the remaining steam.

Step 4. The final phase is to stir in the barbecue sauce and a little brown sugar (optional, depending on how sweet the sauce is). Finally, mix together a little flour (or gluten-free alternative) and water to make a slurry and stir that into a hot stew to thicken the liquid even more. Taste for salt and pepper.

Ingredients

  • 3 tablespoons butter
  • 1 medium onion chopped finely
  • 1 tablespoon minced garlic about 3 or 4 cloves of garlic
  • 3 cups diced potatoes 3 medium potatoes, in cubes
  • 1.5 cup baby lima beans frozen
  • 2 cups corn kernels frozen or canned
  • 3 cups chicken stock
  • 1 can diced tomatoes 14.5 oz. (fire-roasted tomatoes would be best here)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ¼ teaspoon cayenne pepper or red chili
  • ½ teaspoon ground black pepper
  • 2 cups cooked chicken meat shredded or chopped, you can buy pre-cooked chicken or use leftovers
  • 2 cups cooked pork meat shredded or chopped, leftover pork shoulder roast was used here

Finish after cooking:

  • ½ cup barbecue sauce
  • 2 teaspoons brown sugar optional, depending on how sweet the BBQ sauce is
  • 1-2 tablespoons corn starch or other flour to thicken the stew if needed after cooking
  • 2-3 tablespoons water
  • Garnishes: parsley or cilantro or anything else that looks good to freshen it up.
  • Optional: cornbread or biscuits for serving - otherwise simple rice or pasta can also be used

Instructions

  • Turn the Instant Pot on and set to Saute setting. Once hot, add the butter and onions and cook for 2 minutes to soften the onion. Add the rest of the ingredients (except for the finishing ingredients) and stir through. Press Keep Warm/Cancel to stop the Saute process.
  • Pop the lid on top, lock and press Manual/Pressure Cook and set to 1 minute at HIGH pressure. It will take about 10-15 minutes for the pressure to build up, during which time the cooking also begins. Once the timer is done, allow 10 minutes for natural pressure release (simply leave the pot sit). Then use the quick release method to let off the remaining steam (point the steam releasing handle to Venting).
  • Once pressure is released, open the lid and stir the stew. Add the BBQ sauce and the brown sugar (if using) and stir in. Dissolve the cornflour (or regular flour) in water and once it’s white slurry consistency, stir it into the stew to thicken it. Garnish with some fresh herbs and serve.

This recipe reads well. I have been looking for a Brunswick Stew recipe to make in my Instant Pot, and am looking forward to trying this one. However, I only have left over turkey in my freezer, no chicken or beef. Thanks for posting!

I made this last night, and it turned out really well. I strongly recommend starting with about 1/4 cup of BBQ sauce and no brown sugar, and then adding more sauce and/or sugar until it tastes right to you. I ended up just using a dollop more than 1/4 cup of sauce and no brown sugar. Depending on the type of sauce you use (I used Kraft Sweet and Spicy), you might overpower or over-sweeten it which is exactly what happened with my last attempt (using a different recipe). It's easy to add more, but pretty hard to take it back out.

Being from the south, this stew actually hits the spot!! The whole family really likes it, and it's perfectly adapted for the Instant Pot which I was struggling to do on my own with my usual stove top recipe. 10/10!
