We enjoyed the Relish section and Pantry section of the book because it was extremely helpful to understand the foundations of Indian spices.

The beloved kitchen gadget and the delicious cuisine of her home country inspired her first cookbook, Authentic Indian Cooking With Your Instant Pot: Classic and Innovative Recipes for the Home Cook.
Vasanti is a recipe developer, food photographer, and the creator of the popular blog Signature Concoctions. She attended the Institute of Culinary Education in New York City and has been teaching cooking classes for more than a decade.
