- Zucchini: Firm, medium zucchini is what I choose when making this recipe. If they’re too soft, they can get soggy.

- Parmesan cheese: Adds that extra savory flavor. I sometimes skip it, but I wouldn’t recommend it if you can help it
- Eggs: Helps everything stick properly.
- Flour: The base layer that makes the coating hold.
How to Make Air Fryer Zucchini Fries
1. Cut the zucchini into sticks about 3 inches long and ½ inch thick. Pat them dry with a paper towel.
2. Sprinkle the zucchini with salt, pepper, and garlic powder. Toss it gently to coat.

3. Have three bowls ready: one for the flour, one with beaten eggs and another one with a mixture of panko breadcrumbs and Parmesan cheese.
4. Dredge each zucchini stick first in flour, then egg, then panko mixture. Press it lightly so the coating adheres and sticks well.

5. Preheat air fryer to 400°F (200°C). Lightly spray the air frying basket with oil. Arrange the zucchini sticks in a single layer. Spray them lightly with oil. Air fry them for 10 - 12 minutes, flipping halfway through the time, until the Zucchini sticks are golden and crispy.

6. Serve immediately with your favorite dipping sauce.
Recipe Tips
- I always pat the zucchini dry as this is probably the biggest thing that keeps them from going soggy.
- Don’t overcrowd the basket. I’ve tried rushing this before and it never crisps properly.
- A light spray of oil on top really does help to get a golden finish.
