A cozy, hearty one-pot meal inspired by the classic stuffed bell peppers. 

You WILL NEED

Yellow onion  Ground beef Garlic  Bell Pepper  Mixed Italian Herbs Chili flakes  Beef broth  White Rice  Tinned Tomatoes  Tomato sauce Sugar

Turn the Instant Pot on Saute and add the olive oil and onions. Cook for 3-4 minutes, stirring a few times.

Add ingredients

Add ground beef, garlic, and bell peppers and cook on Saute for 4-5 minutes. Use the spatula to break the beef clumps.

Once the ground beef has changed color, add the mixed herbs and chili.

ADD BROTH

Add beef broth/stock and water. Stir everything through scraping the bottom of the pot.

Add rice

Add uncooked rice.

Stir through.

Add the canned tomatoes, tomato sauce and sprinkle the sugar on top. Don’t stir through but spread the tomatoes over the top.

Set to Pressure Cook/Manual on HIGH for 5 minutes. Once the timer is done, use the quick release.

Open the lid and stir the soup. Taste for salt, pepper and chili; add more if you like. Stir in the chopped parsley.

Stir in sour cream. Add grated cheese on top and garnish with extra parsley.

Garnish with fresh parsley and chili flakes. Serve with asparagus, zucchini, broccoli or any other green vegetables or slice a handful of cherry tomatoes.
