A versatile protein that can be used in multiple meals such as shredded chicken wraps, healthy salads or a delicious, easy ramen noodle soup. Great for meal prep and batch cooking.

You WILL NEED

Chicken Breasts  Chicken Broth Paprika Onion Powder Garlic Powder Green Onions

Cut the chicken breasts into 2 pieces each, going lengthways, making sure to slice through the thickest part of the breast.

Combine the seasonings in a bowl.

Sprinkle evenly over the chicken. Rub all pieces with the seasoning mixture and set aside.

Add 1.5 cups of chicken broth or stock into the Instant Pot and nestle the chicken pieces in the liquid.

Set the Instant Pot to Manual/Pressure Cook mode on HIGH for 12 minutes. Once complete, release naturally for 10 minutes.

Remove the chicken from the Instant Pot and place it on a cutting board. Let it cool down. Using two forks, shred the chicken into bite-sized pieces, strips.

Make a wrap with chicken, lettuce, cheese, and tomatoes. Try adding Caesar dressing or Buffalo sauce for extra flavor.

Start with lettuce, cucumbers, celery, bell peppers, radishes, or tomatoes. Finish with salad dressing and a little feta.

RAMEN NOODLES 

Pimp up lazy ramen noodles with shredded chicken for extra protein. This will make the meal more satiating and nutritious.

customize this recipe to create delicious variations of shredded chicken. Add Italian, Cajun, or Taco seasoning instead. Make an Asian version or finish with BBQ sauce, Buffalo sauce or Ranch dressing for a creamy, tangy, sweet or spicy version.
