Make tender Italian beef to pile on top of soft rolls with melted cheese, tangy pickles and extra jus on top. This mouthwatering dish packs a punch of Italian-American flavor.

You WILL NEED

Roast Top Round  Onion, Celery & Garlic Beef Broth or Stock Pepperoncini Peppers  Italian Seasoning Flour  Bread Soft Rolls  Provolone Cheese Giardiniera

Season the beef with salt and pepper.

Using the sauté function of the Instant Pot, sear the beef pieces for 1 minute on each side, then remove to a plate.

Add butter, diced onions, celery and red peppers. Cook for 2-3 minutes, until they start to soften. Add the garlic and cook for an additional 30 secs.

add broth

Add the beef broth and stir the bottom of the pot with a spatula to remove any stuck bits. Now press Cancel to stop the Sauté function.

Stir

Add the pepperoncini peppers, pepperoncini juice, Italian seasoning, and salt to the broth. Stir to combine.

Add water

Add back the beef and stir in the sauce.

Set to pressure cook on high for 60 minutes. Once done, let the pressure release naturally for 10-15 minutes.

Slice the beef

Remove the beef and set aside to cool slightly. Then slice or shred with two forks. Slicing is more traditional for Italian beef.

Slurry

Reduce the sauce. Stir in a tablespoon of flour mixed with 2-3 tablespoons of water to thicken it further.

RETURN BEEF TO SAUCE

Return the sliced beef back to the sauce and stir through.

Pile the shredded beef on hoagie rolls. Top with sliced Provolone cheese and giardiniera. Serve extra cooking jus on the side for dipping.
