In a bowl, add orange juice, lime juice, olive oil, garlic, oregano, cumin, salt, and black pepper.

Whisk together to create the marinade.

Add ¼ cup of water or chicken stock to the pot. Place the pork chunks in the Instant Pot and pour the marinade over the top.

Select the Pressure Cook button and set to 60 minutes on HIGH. Once complete, allow natural release for 10-15 minutes.

Shred the pork using two forks.

Reduce the marinade, then pour some of that mojo liquid over the pork when serving so it absorbs all those delicious juices.

Halve the rolls. Spread a thin layer of Dijon mustard onto one side of the bread and mayo on the other.
