PREPARE VEGETABLES

Dice potatoes into small cubes. We want all vegetables to cook evenly for the same length of time.

Saute first

Using the Saute button, cook onions, celery and carrots in olive oil seasoned with salt for 2-3 minutes. Stir a few times.

ADD ALL OTHER INGREDIENTS

Add canned beans, seasonings, bay leaves, potatoes, pasta and tomato paste.

ADD THE LIQUIDS

Add canned chopped tomatoes and vegetable stock, stir.

PRESSURE COOK

Set to Pressure Cook for 1 minute on HIGH. Instant Pot will take 15 minutes to come to pressure.

Add spinach

Once done, allow 10 mins for natural release. Then quick release. Open and stir in the spinach. Leave for 1 minute to wilt. Stir in the basil.

SERVE & ENJOY

Serve minestrone in deep bowls with grated Parmesan or other cheese. Omit for a vegan version.
