This star fruit salad is one of my favourite Summer recipes. The crisp greens, juicy pomegranate, and sweet-tart star fruit make a delicious dish, especially with the fresh lime dressing.

Ingredients
3cupsany green of choice
2large ripe star fruits, sliced
¾cuppomegranate seeds
½cupthinly sliced cucumber
¼cupthinly sliced red onion
2tablespoonchopped fresh basilor fresh cilantro or parsley
1tablespoonolive oil
1½tablespoonfresh lime juice
½teaspoonsalt
¼teaspoonblack pepper
¼teaspoonchili flakes(optional)
Instructions
Wash and dry all of the greens well. Tear the leaves into bite-sized pieces if needed and place in a large bowl.
Slice the star fruit into star-shaped slices.
Thinly slice the cucumber and red onion.
Add the star fruit, pomegranate seeds, cucumber, onion, and herbs to the bowl.
In a small bowl, whisk together olive oil, lime juice, salt, black pepper, and chili flakes.
Pour the dressing over the salad and toss gently.
Serve immediately.
