In a bowl, whisk together egg and milk. In another shallow bowl, mix panko breadcrumbs, Parmesan cheese, Italian seasoning and garlic powder.
Dip each pork chop into the egg mixture, then coat thoroughly in the panko mixture, pressing gently so it sticks.
Preheat air fryer to 380°F (195°C). Spray the basket lightly with oil and place pork chops in a single layer. Spray the tops lightly with oil. Air fry for 8 minutes, then flip and cook another 4 - 6 minutes until crispy and nearly cooked through.
Spoon marinara sauce over each pork chop and sprinkle with mozzarella cheese.
Return to the air fryer and cook for 2 - 3 minutes until the cheese is melted and bubbly.
Garnish with chopped parsley and serve hot.

I love serving these with roasted potatoes or a fresh salad for an easy balanced dinner.
Ingredient Notes & Substitutes
Pork chops: Boneless cooks faster, but bone-in can also be used (add a few extra minutes).
Panko: Gives the crispiest texture compared to regular breadcrumbs.
Marinara: Use store-bought or homemade tomato sauce.
Mozzarella: Provolone or Italian cheese blend also works well.
