Ingredients
2tablespoonbutter
¼cupfinely chopped onion
1clove garlic, minced
1cupcooked shredded chicken
1cupmashed potatoes
¼cupmilk
½cupbreadcrumbs
¼cupgrated Parmesan cheese
1tablespoonchopped parsley(optional)
½teaspoonsalt
½teaspoonblack pepper
1egg(for coating)
¾cupbreadcrumbs for coating

Instructions
In a skillet over medium heat, melt butter. Add onion and cook for 2 - 3 minutes until softened. Stir in garlic and cook for another 30 seconds
Add shredded chicken, mashed potatoes and milk to the skillet. Stir to combine. Mix in breadcrumbs, Parmesan, parsley, salt and pepper. Cook for 1 - 2 minutes until the mixture thickens slightly. Remove from heat and let cool.
Once cooled, shape the mixture into small logs or oval croquettes.
Beat the egg in a bowl. Dip each croquette into the egg, then coat with breadcrumbs.
Preheat the air fryer to 375°F (190°C). Lightly spray croquettes with oil and place them in a single layer in the basket. Air fry for 10 - 12 minutes, flipping halfway, until golden and crispy.
Let cool slightly before serving. Serve with your favorite dipping sauce.
