Loaded with three types of beans, ground beef, bacon, onions and bell peppers, this tangy and sweet Southwestern classic is a family favorite. Perfect for  potlucks, barbecue parties, and game day.

You WILL NEED

Bacon Ground Beef  Red or Pinto Beans Tomato-based Baked Beans White Beans or Black-Eyed Peas Onion & Green Bell Pepper Vegetable Stock Garlic & Onion Powder Paprika, Chili pepper Brown Sugar  Worcestershire Sauce, Dijon Mustard Barbecue Sauce

Press the Saute function and add the oil and bacon. Stir until browned and crispy. Remove and set aside.

Add onions, bell peppers and ground beef and cook for 4-5 minutes to brown off.

Add the stock and stir scraping the bottom with a spatula to remove any stuck bits to avoid  the Burn error.

Add the remaining ingredients except for the barbecue sauce.

Add half of the cooked bacon back to the pot and stir.

Stir through and then spread the BBQ sauce over the top but don’t mix through to prevent the possible Burn error.

Pressure Cook for 5 minutes on HIGH. Once done, let the Instant Pot stand undisturbed for 5 minutes and then use the quick release.

Open the lid and stir the beans.

Saute function again. Cook the beans for 5-7 minutes to reduce the liquid in the sauce by about a third. Stir frequently.

TOP WITH EXTRA BACON

Top with the reserved cooked bacon and serve with a side of grated cheese.
