Rich in Italian tomato sauce with herbs and garlic and meat falling off the bone, these Instant Pot chicken drumsticks are great for the whole family.

You WILL NEED

Red Onions  Chicken Drumsticks  Chilli Powder  Dried Thyme  Lemon  Garlic  Canned Tomatoes Balsamic Vinegar

Saute ONIONS

Saute onions seasoned salt for 2-3 minutes until lightly golden. Then, add 1/4 cup of water or chicken stock and stir through the onions.

Add Ingredients

Add the chicken drumsticks and sprinkle with the rest of the salt, pepper, chilli,  thyme, lemon zest and add whole garlic cloves.

ADD TOMATOES

Follow with tomatoes and balsamic vinegar. Spread ingredients evenly between the chicken drumsticks but don’t stir through completely.

PRESSURE COOK

Set to Pressure Cook for 15 minutes on High. Once done, 5 minutes Natural Release, followed by Quick Release.

Finish THE CHICKEN

Open the lid and stir through the chicken. If you like, you can remove the chicken and reduce the sauce on Saute setting.

Serve the chicken and the sauce over rice, pasta or potatoes or with a side of vegetables. YOU CAN peel the meat off the bone and mix it in with the broth.
