Inspired by cheesy nachos, this Instant Pot beef and rice casserole is hearty, delicious and satiating – perfect for the whole family! Made with ground beef, rice, tomatoes and a few pantry staples.

Gather and prepare ingredients: beef, corn, peppers, onions, rice, broth, tomato sauce, cheese, seasonings, and garlic.

Press the Saute setting. Add olive oil and onions. Cook for 1 minute to soften.

Add the beef and salt. Break the meat apart with spatula.

Add the garlic and chili.

Add chicken stock.

Use the spatula to stir, scrape the bottom of the bottom to prevent burn error.

Add a cup of long-grain rice (well rinsed and drained).

Add tomato sauce on top  but don’t stir, simply spread over the top.

Add corn and roasted red peppers on top. Don't Stir. Secure and lock the lid.

Set to Pressure Cook for 5 minutes at HIGH pressure.  Once done, natural release for 2 minutes

MAKE SIDES

Prepare guacamole. Gather and dice ingredients: tomatoes, avocado, cilantro, and lime.

Prepare other toppings: salsa, corn chips, cilantro, and cheese.

Cover the pot with a regular lid for 3-5 minutes. The cheese should be melted by the heat/steam.

Crush a few corn tortilla chips. Sprinkle over the cheese followed with some fresh cilantro.

Scoop and add toppings like guacamole, sour cream, fresh cheese, hot sauce, salsa, raw onions, and so on.
