Ingredients
3cupscorn chips Doritos crushed 3 oz | 90 g
1oztaco seasoning 28 g
1cuptomatoes diced canned 8.5 oz | 400 g
1cupcream of chickencanned 8.5 oz | 240 g
4cupschicken cooked and shredded 1.30 lb | 21 oz | 600 g
1cupred beans drained and washed 8.5 oz | 240g
½cupsweet corn drained and washed 5 oz | 140g
2cupscheddar cheesegrated 16.5 oz | 470 g
Salt and pepper to taste
Garnish: Chopped cilantro
Instructions
Preheat the oven to 356 F | 180 C. Grease a 9x13 inch baking dish.
Add 1 ½ cups crushed Doritos at the bottom of the baking dish.
Add taco seasoning, diced tomatoes, cream of chicken, shredded chicken, red beans, and sweet corn to a bowl. Toss all together. Season with salt and pepper to your liking, you may also add extra chili or hot sauce.
Transfer to the baking dish on top of the Doritos.
Spread 1 more cup of Doritos, then cheese and then the rest of the corn chips
Bake in the middle of the oven for 20-25 minutes until the cheese melts.
Garnish with chopped cilantro parsley and serve immediately hot.
Notes
What can I use instead of cream of chicken? You can use cream of mushroom or broccoli. A jar of Alfredo sauce can also be a suitable substitute, providing a creamy and rich flavor. If you're looking for a homemade, less processed alternative, make a simple white sauce with butter, flour, and milk. Season it with a bit of chicken or vegetable bouillon and garlic powder for added flavor.
