Who is this book for?
Whether your goal is to lose weight, boost your energy or adopt an all-around healthier lifestyle, make your life easier with low carb, high-fat, sugar-free dishes the whole family will love. This book is for anyone wanting to create a healthy nourishing diet for their family while not having to stress over how to find time to fix it.
Use your Instant Pot® to throw together nourishing Keto dishes any night of the week. The ketogenic diet is a very low-carb, high-fat diet. It involves reducing carbohydrate intake and replacing it with fat. This reduction in carbs puts your body into a metabolic state called ketosis. This means your body becomes efficient at burning fat for energy. It lowers blood sugar and insulin levels and shifts the body’s metabolism away from carbs and towards fat and ketones. It also turns fat into ketones in the liver, which can supply energy for the brain.
About the author
Dr. Karen S. Lee started cooking Paleo-friendly foods for her family years ago to help with food allergies, and they began their Ketogenic (Keto) journey to further control inflammation and weight gain. A hectic schedule makes planning meals hard enough, and sticking to a low-carb, healthy whole foods regime adds an additional challenge, but with the Instant Pot, Karen was able to turn family favorites that used to take hours into fast, stress-free meals. Her new cookbook, Keto Cooking With Your Instant Pot helps anyone enjoy delicious foods easily and without guilt.
“My goal in writing this book was to help you cook nourishing foods easily in the Instant Pot so that you can face your unique health challenges using common ingredients that you probably already have,” Karen writes in the introduction. “Being on the Keto diet is challenging enough; cooking doesn’t have to be stressful when you can use the Instant Pot to make your favorite dishes without fail.”
Karen is an accomplished holistic practitioner, a former doctor of chiropractic medicine and the author of Paleo Cooking with Your Air Fryer. She lives in Westchester County, New York with her family.
